I'm on a quest to use up leftovers and to also clear out my upright freezer.
Today I made a wonderful fruity sauce that I'll use over chicken tonight. I had some leftover fresh pineapple and a mango (49-cent score from Aldi). I pulsed these in the food processor. I added a bit of minced fresh ginger, a sprinkling of brown sugar and a tsp. or so of garam masala. Lovely.
There is enough for two servings which means I'll freeze half of it. Doh! That interferes with wanting to clean out the freezer!

Whenever I make soup, I make a lot. Then I freeze it. At any time, I might have 3 or 4 different types of soup in the freezer.
I also make mashed potatoes in bulk and then freeze them in containers that are the size for dinner.
When sweet corn is in season, I buy (or grow) enough to freeze so that I can have real sweet corn year round. (I can't eat canned or frozen corn from the store. Yuck!)
A couple times a year, I'll buy a large ham usually at Thanksgiving, Christmas, Easter when it is on sale. With that, I'll make a variety of casseroles and soups and freeze those.
When meat is on sale, I'll buy enough to get us through until the next sale. Same with orange juice.
I also freeze spag. sauce and other sauces.
